| We are not typical and take our coffee and teas as seriously as the irish take their whiskey! There is an art to drinking coffee and tea, like fine wines each have their own subtle variations and complexities. Not many people realize it, but 99% of the coffee out there is stale. What? How can this be? Coffee fresh from the roaster is considered one of the world's most flavorful beverages, containing well over 900 flavor compounds to dance on your taste buds. Ten days out of the roaster and you lose half of that, by 30 days you maybe have 10%. If a coffee tastes bitter it is too late. Coffee by many connoisseurs is known actually as a sweet beverage. Hence our philosophy: While we do roast small batches of coffee daily for the Crossing Stone Cafe, all orders are roasted upon placement of order. While it might mean an order won't go out immediately (generally 2-3 days) it does mean that the coffee received is fresh out of the roaster and loaded with flavor. We get many questions about how to find that perfect coffee or tea. The best way to do it is to taste, taste, taste!
